Ingredients:
- 1 egg
- ½ cup sugar
- ½ cup cooking oil
- 1 cup milk
- 2 cups flour
- 1 ½ Tbsp baking powder
- ¼ tsp baking soda
- 1 tsp vanilla
- 1 cup chocolate chips
Method:
- Heat oven at 180 degrees C and line a muffin tin with baking cups.
- In a large bowl, whisk egg, sugar and vanilla.
- Gradually add cooking oil and milk then mix until well combined.
- Add flour, baking powder and baking soda. Stir well until you get a smooth batter.
- Add chocolate chips and gently fold them in using a spatula.
- Fill cups 2/3 full and bake for 20 – 25 min.
